SHISH KABOBS ROCK!
1-1/2 lbs. boneless skinless chicken breasts cut into bit-sized pieces
2 large green bell peppers, cored and cut into bite-sized pieces
2 large red bell peppers, cored and cut into bite-sized pieces
1 large pineapple, cored and cut into bite-sized pieces
1 large purple or sweet onion, peeled and cut into bite-sized pieces
2 tablespoons olive oil
Salt & pepper to taste
¼ teaspoon toasted sesame oil
¼ cup cilantro leaves, finely chopped
2 garlic cloves, peeled and minced
1/3 cup soy sauce
¼ cup orange or pineapple juice
3 tablespoons honey
3 tablespoons olive oil

Whisk together the marinade ingredients in a small bowl..
Place the chicken into a resealable plastic bag. Pour the marinade over the chicken, seal the bag, and shake to coat. Refrigerate for at least 30 minutes. Overnight adds lots of flavor.
Thread the chicken and veggies onto skewers, alternating to give your kabobs a rainbow look.
Preheat grill for medium-high heat. Grill for 8-10 minutes or until desired doneness. Turn and baste frequently with reserved marinade during cooking.
